Congratulations for making it through your first week of the Paleo Challenge! Thanks to everyone who came to the cook-out on Saturday. We had a great time and shared a lot of yummy recipes. We’ll be having another event like this in a few weeks, so keep your eye out for details on that.
Today’s post (and probably tomorrow’s) is going to be a quickie – lots of work stuff to catch up on for me. But I wanted to pass along a recipe for what has got to be one of the best applesauce recipes I’ve ever tasted. The brilliant Diane Sanfilippo of Balanced Bites came up with this as part of her “21 Day Sugar Detox” program. If you try it, let us know what you think!
For the people asking about sourcing grass-fed beef (or buffalo, or elk, etc.), here are a few places we like:
- Buffalo Gal
- US Wellness Meats
- Pastured Products Directory for Colorado (directory for other states too!) – if you’re looking to go “cowpooling” with friends or family you can find a rancher or small family farm here. Just note that meat procured this way doesn’t usually become available until about October, but it’s enough time to learn about the process and figure out what will work for your family.
